Homemade raffaello : coconut, white chocolate and almond treats !
You are not dreaming: this is the recipe for Raffaello balls. Let's prepare a very cheap and super easy version. We will make it without condensed milk, only with white chocolate and its characteristic coconut flavor. These sweets of Italian origin are made with few ingredients, they are very simple to make and ideal for parties such as Christmas, Easter and birthdays (that is, for almost any occasion). Preparation
- Chop the white chocolate, put it in a bowl and set aside. Heat the cream in a saucepan and bring it to a boil (it can also be heated in the microwave).
- Pour the hot cream into the chocolate bowl and stir well until the chocolate has completely melted (the mixture should be smooth and homogeneous). Let it cool down at room temperature. Then, we will put it in the fridge for a minimum of 4 hours (better overnight).
- After the cooling time, blend or chop the wafers. Take the chocolate ganache out of the fridge and, with the help of a spoon or spatula, combine with the wafers.
- To shape the Raffaellos :
Put about a teaspoon of the cream in the palm of your hand and place an almond in the center. Next, make a ball with the palms of your hands. Repeat this step until the mixture is finished.
- Roll each ball in grated coconut. The balls have to be perfectly covered. Next, place each ball in the paper capsules. Finally, chill in the fridge for at least 1 hour before serving.
- There you are, your Raffaellos are ready !

If there are any leftovers, store them in an airtight container in the fridge. These chocolates do not withstand high temperatures well as they spoil the texture of the product.
