There are classics that we will never tire of for dessert: such is the case with financiers! Perfect for satisfying a sweet break, you will surely fall for these little treats made with almond flour. Paired with a coconut macaron, a chocolate mousse verrine, and mini canelés, you can offer a magnificent coffee dessert to your guests :-)

Prepare the hazelnut butter: Melt the butter in a pan and let it brown.
Remove from heat when the butter smells nutty and is golden. Strain to filter out the residues and let cool until it reaches 104°F (40°C, room temperature).
Mix the almond flour, flour, and icing sugar in a bowl. Add the egg whites and mix well.
Finally, add the hazelnut butter and vanilla extract and incorporate everything well.
Pour the batter into a greased financier mold and bake in a preheated oven at 390°F (200°C) for 15 minutes.
Since the mold holds only 9 molds, we left the remaining batter at room temperature while the first financiers baked, then baked the rest afterward. And there you have it, ready for tea time :D
