Tortellini with cream and baked ham

These days we are preparing the menu for Valentine’s Day.

A simple menu, so simple that even a “clumsy” boy can think of doing it to surprise his partner.

Among the many simple dishes that Italian cuisine offers we chose the tortellini with cream and ham.

Here are our tortellini on the top of heart-shaped puff pastry!


For once  we  looked  for the doses and ingredients in the various sites offering this recipe. It isn’t one of our favorite dishes. We prefer the tortellini in broth to appreciate its filling and dough. But as it is a very popular recipe, we decided to prepare and take a photo of  them in the right setting.

The search begins!


First site (serves 4) 600g tortellini – 250 g heavy cream – 50 g unsalted butter – 150 g baked ham, diced – 100 g  grated Parmesan cheese

Too mmuch pasta according to the doses of fresh pasta. High in our opinion the amount of cream and parmesan. An entire bag of cheese? Gulp!


Second site (serves 4) 350 g tortellini – 70 g baked ham, cubed – 70 g heavy cream – 1 tablespoon unsalted butter – nutmeg to taste

Note and ponder … from an extreme to another ….


Third site (serves 4) 400 g tortellini – 400 g baked ham – 1 tablespoon unsalted butter – 1 jar heavy cream – salt and pepper

But, in short, what is the right amount of tortellini? and are not too many 400 grams of ham? the same dose of tortellini?


Fourth site (serves 2) 250g tortellini – 1 brick heavy cream – 50 g baked ham – 4 / 5 tablespoons frozen peas – 2 tablespoons grated Parmesan cheese – 1 / 4 onion – 1 tablespoon olive oil – salt and nutmeg.

These doses seem much more reasonable. The right dose of fresh pasta. There are also peas, which is actually an acceptable variant. There is no butter. The right amount of parmesan cheese. But we think  the cream is still too much. In our opinion, the taste of tortellini should win on everything.


Let’s go on!


Fifth site (one dose) 250 grams tortellini – 125/150 g baked ham in a slice  – 200 ml heavy cream – parmesan cheese to taste – butter – olive oil – garlic – salt

In conclusion, think about it: if  you  look  for  doses and ingredients of  a recipe that you have  never done, how can you trust? The answer is simple. Read a lot of versions and then adjust the doses to their way of cooking. It’s  ‘the only solution. And then test always a recipe if you want to prepare it  for your guests.
