Triple-Chocolate Ice-Cream Sandwiches from Better Homes and Gardens Grilling Magazine, Spring 2010
I don't know that there's much to say that this picture doesn't already do for me, honestly. I live with a couple of chocolate lovers, which is what is needed to really enjoy this dessert. In fact, the little blurb with the recipe says, "...mouthwatering treats for chocolate lovers with just three easy-to-find ingredients."
Well, yes, the chocolate lovers part is true, however the easy-to-find ingredients was not so much so. I found the sprinkles and chocolate ice cream very easily, but couldn't get my hands on any chocolate chocolate chip cookies. Even if any of the brands that were available at my grocery store made them, there weren't any that came anywhere close to the 3 inches needed to make these mammoth ice cream sandwiches. So, when you can't find it; make it. I went to my trust Mrs. Fields Cookie Book and turned to her recipe for Double-Rich Chocolate Cookies. Making those took up a good portion of the morning since I also had to fend of hot cookie loving husband and daughter. In truth, I didn't follow the instructions (head hanging). Instead, I just let the ice cream soften a bit, scooped it up, squished it onto the bottom of one cookie, topped it with the other, then pressed the sprinkles into the sides. It worked just fine for making just three cookies and I didn't have to worry that the ice cream or cookie was too hard from having sat in the freezer for an hour. I have to tell you, the promise of this dessert upon a completely eaten meal is incredibly good incentive for a four year-old. Not only did she eat her dinner and seconds, but she ate it in less time than I've ever seen her take at dinner. We've usually gotten the table cleared and the dishes put up by the time she finishes up enough of what's been served to her for us to believe that she's gotten a healthy amount. Anyhow, this definitely was a hit all around. I would have enjoyed it immensely if there hadn't been chocolate chips in the cookie. I don't like chocolate but can handle it in ice cream and brownies (or chocolate cookies), but the concentrated pure chocolate chip and bar candy is just too much for me. It's a true hit though. Triple-Chocolate Ice-Cream Sandwiches from Better Homes and Gardens Grilling Magazine 1 quart chocolate ice cream 16 soft chocolate cookies with chocolate chunks (about 3 inches in diameter) 1/2 cup chocolate sprinkles In a chilled large bowl, stir ice cream with a wooden spoon until softened. Working in batches, use a 1/2 cup ice cream scoop to scoop ice cream into the bottoms of half of the cookies. Top with the remaining cookies, bottom sides down. Press together lightly until ice cream is pushed to edges of cookies. Roll edges of ice cream sandwiches in chocolate sprinkles. Place on a baking sheet. Cover and freeze about 1 hour or until ice cream is firm. Before serving, let ice cream sandwiches stand at room temperature for about 10 minutes before serving or until slightly softened.
