5 gem squash

½ cup sugar
5 tablespoons cake flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk
3 eggs
1 tablespoon cinnamon sugar

Heat the oven to 180°C. Grease an oven proof dish. Halve the gem squashes and remove the seeds.
Boil the gem squash until soft. Drain the squash. Mash the scooped out meat of the squash and stir in the butter or margarine.
Sift the sugar, cake flour, baking powder and salt together. Whisk the milk and eggs together.
Add the milk mixture to the dry ingredients stirring continuously. Add the squash mixture and mix well.
Add mixture to oven dish and sprinkle half of the cinnamon sugar over the top.
Bake the mousse for an hour without a lid. Sprinkle the rest of the cinnamon sugar over the top and serve.
