Preparation

  • Heat the oven to 180°C. Grease an oven proof dish. Halve the gem squashes and remove the seeds.
  • Boil the gem squash until soft. Drain the squash. Mash the scooped out meat of the squash and stir in the butter or margarine.
  • Sift the sugar, cake flour, baking powder and salt together. Whisk the milk and eggs together.
  • Add the milk mixture to the dry ingredients stirring continuously. Add the squash mixture and mix well.
  • Add mixture to oven dish and sprinkle half of the cinnamon sugar over the top.
  • Bake the mousse for an hour without a lid. Sprinkle the rest of the cinnamon sugar over the top and serve.
