Valentine's Day Dinner Starter - Crispy Prawns with Creamy Garlic & Saffron Sauce

Some may say Valentine's Day is one big con, a waste of time and money. I say to them "Whatever, you sour grape!".


So how was your Valentine's Day? I hope you had a good one =) We usually avoid going out on this day as the restaurants are usually packed with lovey dovey couples, overpriced menus and so-so food (the quality just isn't the same..well, at least for that one restaurant we tried many years ago). Anyway, this year was no exception, we stayed in. The wild boar was on call that weekend, so I had a lot of time to myself to prepare something nice for the poor boar. I decided to prepare a surprise romantic candle light dinnner.

Menu of the day was a 3-course set menu, accompanied with a bottle of white wine.

Prawns with Crispy Parma Ham Topping Served with Creamy Garlic & Saffron Sauce


My initial plan was to serve this with scallops instead of prawns but the scallops disappeared from the counter when I went grocery shopping the day before V-day. There were loads the day before and that was why I decided to make this. Anyway, the prawns were still good - very "bouncy" and succulent.


WB: The prawns were indeed springy texturally and naturally sweet but the panko and ham topping provided a nice salty and crunchy layer. The dish was rounded up with a very creamy (but not buttery) sauce and the garlic aroma was nicely evident.

Ingredients: serves 2

6 prawns
Olive oil
For topping:
4 tbs breadcrumbs
3 tbs (about 2 slices) parma ham
1 clove garlic - grated
1 tsp dried parsley
For sauce:

1 tsp unsalted butter
1/3 cup double cream
1 pinch saffron
1 clove garlic - grated
2 tbs white wine
Directions:

For sauce:

Melt butter in a saucepan over low heat.
Add garlic, fry until fragrant.
Pour in cream, saffron and leave to cook on very low heat for about 10 mins.
Before serving, add white wine.
For baked prawns:

Pre-heat oven to 220°C.
Mix together all ingredients for topping in a bowl.
Arrange prawns on a baking tray.
Spoon topping mixture onto prawns until prawns are all covered.
Drizzle olive oil on topping.
Bake for about 8-10 mins or until topping is golden browned.
