- Toss together strawberries and sugar, leave to macerate for about 1 hour.
- For Creme Pattissiere:
Heat up milk, double cream and vanilla bean in a small saucepan until almost boiling. Turn off heat and let it steep for about 10 minutes. - Beat together egg yolks and sugar in a mixing bowl. Sift in plain flour and corn flour. Mix until combined.
- Re-heat milk mixture.
Add a splash of milk mixture to egg yolks mixture. Gradually whisk in the rest of the milk mixture.
Pour this back into the saucepan.
- Whisk over a medium-low heat until thickened.
Leave to cool and refrigerate for later use. - To assemble:
Spoon about 2 tbs of creme pattissiere into each ramekin. - Add 2 tbs of softened strawberries, then top with the rest of the creme pattissiere, followed by the rest of the strawberries.
Serve with some meringue.
