What to replace Mascarpone with?
Mascarpone is a cheese used in many recipes. However, it's also very high in calories. So if you've run out of it, or want to make your preparations lighter, here are a few ingredients that can replace it.
This cheese comes from Italy and is used in the preparation of many dishes and desserts. It is most famous in the recipe for tiramisu. This creamy cheese is made from cow's milk cream, to which vinegar or lemon juice is added to curdle it. The resulting paste must then rest in the refrigerator to drain.
If you've run out or forgotten to buy some, don't panic! There are many substitutes for this cheese.
Ricotta cheese
This other Italian cheese is ideal for replacing mascarpone in tiramisu. The advantage is that it's much lighter. Don't hesitate to add and mix in a little liquid cream to make the ricotta creamier, and thus obtain a better texture.
Cream Cheese
This is a popular choice as it has a similar texture and can be used in both sweet and savory dishes. However, it might be slightly tangier than Mascarpone.
You can mix heavy cream and cream cheese together to create a Mascarpone-like mixture. This is a good option if you want a richer and creamier texture.
Cream
A culinary classic, crème fraîche can easily replace mascarpone in countless preparations. Its taste and texture are almost identical to mascarpone. This makes it one of the best substitutes for its cousin. Don't hesitate to use light cream to lighten your recipe even further.
Soy or plant based yoghurt
You can replace cheese with vegan ingredients. Soy milk (or any plant-based) yoghurt is perfect for this. Just let it drain for 24 hours in the fridge. The next day, whip it with coconut oil and you're all set.
Greek Yogurt
This is a healthier alternative to Mascarpone, as it is lower in fat and calories. It can be used in both sweet and savory dishes, but it might be a bit tangier.
