Apricot mascarpone muffins

This muffin has a surprise in it, an apricot filled with mascarpone ! So yummy !

- In a first bowl, mix 1/4 cup mascarpone with 1 tbsp sugar.
In a second bowl, mix remaining sugar with 1 cup mascarpone. Add the eggs and mix again. - In the second bowl : add flour and baking powder and mix well. Finally, add milk gradually while mixing.
- Pour the batter into greased ramekins and preheat the oven to 350°F (180°C).
- Clean the apricots, cut them in half and remove the core. Fill them with the first bowl mascarpone + sugar mix and close with the other apricot half.
- Place stuffed apricots into each ramekin, in the batter.
- Bake 25 minutes at 350°F (180°C).
- There you are, your apricot mascarpone muffins are ready !
