Apricot clafoutis with air fryer
Clafoutis is often made with cherries, but it can also be made with other seasonal fruits for a touch of originality. A light, summery version: apricot clafoutis, made with an air fryer. This modern cooking method produces a flavorful, moist dessert in a very short time, while preserving the sweetness of the apricots. A subtle balance between the slightly sweet pastry and the juicy, tangy apricots.

Preparation
Break the eggs into a bowl with the sugar and mix.
Add the flour and mix.
Add the milk and melted butter and stir.
Place the apricot halves tightly in the buttered mould.
Pour the batter into the tin over the apricots.
Place the mold in the Air Fryer and bake at 350°F/180°C in "Bake" or "Cake" mode for 40 minutes.
Leave to cool for several hours (or even overnight) before unmolding.
Observations
For a pretty presentation, sprinkle with powdered sugar before serving!
Use quality apricots
Choose ripe but firm apricots to avoid rotting during cooking. Over-ripe apricots can make the clafoutis too moist.
If you use tinned apricots, be sure to drain them well to avoid excess liquid.
Mix the ingredients well
Beat the eggs and sugar until the mixture turns white. This helps to incorporate air and gives your clafoutis a lighter texture.
Sift the flour before adding it to the mixture to avoid lumps and obtain a smooth batter.
