Sliced or grated carrots are a familiar sight, so reinvent your approach to carrots with this recipe. It's not always easy to be imaginative with your side dishes, which tend to be left aside for the main course. Honey, clementine juice and your carrots come out of the oven, looking dapper than ever, and your guests will be blown away by the result! Here's how to prepare them, step by step:

Ingredients for 4 people :

  • 14 oz carrots
  • olive oil
  • 3 cloves of garlic
  • 1 aromatic bouquet (or 2 bay leaves)
  • salt
  • pepper

Sauce:

  • 2 clementines
  • 1 oz unsalted butter
  • 1 tbsp honey
  • 1 tbsp red wine vinegar
  • salt
  • pepper

Utensils required :

  • Knife
  • Baking dish
  • Cutting boards
  • Wooden spoons
  • Aluminum foil

Step-by-step preparation :

  • Preparation and heating

Preheat the oven to 350°F/180°C and wash the carrots.

  • Create the accordion effect

Place a carrot between 2 planks (or 2 wooden spoons) and make fine incisions without cutting all the way through.

  • Prepare the mold

Grease the mold, then place carrots, garlic, aromatic bouquet, salt and pepper.

  • Bake in the oven

Cover with aluminum foil and bake for 1 hour. Remove foil, stir and bake uncovered for a further 20 minutes.

  • Prepare the sauce

Grate clementines, extract juice and melt butter. Combine zest, juice, butter, honey and vinegar in a bowl. Season with salt and pepper, then mix.

  • Finishing touch

Pour the sauce over the carrots and bake for a further 15 minutes, until golden brown. And that's it!
