  • Rikakats-style samosas - Preparation step 1Prepare the filling: mix feta with lemon juice, fresh chives, salt, and pepper.
  • Rikakats-style samosas - Preparation step 2Cut the filo pastry sheets in half and fold each half in two, bringing the rounded part over the cut part.
  • Rikakats-style samosas - Preparation step 3Place a generous tablespoon of filling at the edge of the folded sheet, then fold to form a triangle.
  • Rikakats-style samosas - Preparation step 4Fold the triangle again to the end of the sheet. Brush the remaining part of the sheet with beaten egg and fold, pressing well to seal the samosa.
  • Rikakats-style samosas - Preparation step 5Place the samosas on a baking sheet lined with parchment paper. Brush each side with olive oil and bake for 10 minutes at 200°C (390°F).
