Rikakats-style samosas

Prepare the filling: mix feta with lemon juice, fresh chives, salt, and pepper.
Cut the filo pastry sheets in half and fold each half in two, bringing the rounded part over the cut part.
Place a generous tablespoon of filling at the edge of the folded sheet, then fold to form a triangle.
Fold the triangle again to the end of the sheet. Brush the remaining part of the sheet with beaten egg and fold, pressing well to seal the samosa.
Place the samosas on a baking sheet lined with parchment paper. Brush each side with olive oil and bake for 10 minutes at 200°C (390°F).
