Everyone knows flan, but have you ever tried it with mascarpone ? It improves this simple dessert with a smooth texture and a je-ne-sais-quoi that will makes everyone loves it !

Put mascarpone in a bowl, then add evaporated milk and full-cream milk, sugar and whisk it all together.
Add the full eggs and the yolks, and mix. Put it in the fridge for 30 minutes.
Meanwhile, the caramel :
Pour the sugar in a pan on medium heat, then add water. Leave on the heat while sometimes stirring, until sugar gets brown. Immediately pour the caramel into ramekins.Set a water bath up in your oven, and preheat at 360°F.
Once the cream is cold, pour it into the ramekins.
Then, when oven is hot, put the ramekins in the water bath, then lower the temperature to 320°F. Bake for 50-60 minutes
When cooked, leave flans to cool then put them in the fridge for several hours. Once cold, gently unmold them.
Your flans are ready, you can add some whipped cream to improve it !
