Strawberry banana bread

Ingredients

Number of serving: 6

For the Bread :

2 cups of all-purpose flour

3/4 cup banana smashed (2 bananas)

1 cup of strawberries (washed and chopped)

1 cup granulated sugar

1 tablespoon of melted butter

1 tablespoon oil

1/2 teaspoon baking soda

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

2 teaspoons baking powder

1 egg (beaten)

Pinch of ground nutmeg (4 1/2" width x 8 1/2" long loaf pan)


For the Strawberries Syrup :

1 1/2 cup of strawberries (washed and chopped)

1/4 cup water

1/4 cup granuladed sugar

Preparation

  • For the Strawberries Syrup :

    Place in a saucepan at low heat the strawberries, sugar and water.
    Cook for 20 minutes.
  • For the Bread :

    In a bowl, mix flour, sugar, baking powder, baking soda, ground cinnamon and ground nutmeg.
    In other bowl, mix the banana smashed, egg beaten, melted butter, oil and vanilla. Then, add this mixture to the other.
    Mix well, add the strawberries.
    Pour mixture into a buttered pan. Bake for 1 hour at 350° F. (I had to bake the mixture for 50 minutes at 300° F. because my oven usually is too hot).
    Remove from pan, cool for 20 minutes.
    Place on top the strawberries syrup.
