  • In a bowl, sieve the flour, baking powder, salt, paprika powder and mix well.
  • Then gently pour in the beer, water or milk and gently mix well until all is dissolved.
  • Let the mixture rest in a chiller for at least 15 minutes.
  • Heat the oil in the deep fryer or wok to 380°F.
  • Lightly dust the cod with flour, then dip the fillet in to the batter, then transfer it to the hot oil and cook until golden brown.
  • Remove from the oil and make sure it is totally dry by using a strong paper kitchen towel.

We live in Wisconsin where Friday Night Fish Fry is part of the culture. I've tasted so many different recipes. My son prepared Atlantic cod using this recipe tonight and, truly, it was the best fish I've ever eaten. Crispy, golden, flavorful, delicious! He used a dark German beer.
