- Prepare the meat: in a saucepan, add the 2 cups of water with the meat, 1 onion and 1 clove of chopped garlic (add salt and pepper to taste).
Cook over medium heat with the lid on for about 35/40 minutes, until the meat is tender. - After this time, remove the meat and let it cool before shredding it with forks. Reserve 1 cup of the meat cooking water.
- Prepare the hogao or tomato-based sauce: in a frying pan, heat the oil over medium heat, then add 1 chopped onion and 1 clove of garlic and brown. Stir occasionally until the onion is translucent. Then add the chopped tomato and cook over low heat for 10 minutes.
- Add the shredded meat and mix well with the tomato-based sauce, add the cup of broth where the meat was cooked. Season with salt and pepper and add the parsley (to taste).
Cook over low heat for a few minutes.
- In a saucepan add 1 cup of water, pork belly, 1 clove of garlic and salt. Cook for 10 minutes. Remove the pork and set aside on a sheet of absorbent paper.
- In a pan with enough oil, brown the same slice of pork belly until browned on both sides. Remove and place on absorbent paper to eliminate excess fat.
- Cut the plantain into thin slices and fry them in the same pan as the pork belly.
- In another pan, brown the chorizo.
- Cook the egg until the yolk is to your liking.
- Cook the rice. Meanwhile, slice the avocado and reserve the cooked beans in a bowl.
- Assemble everything by distributing the portions of each element on a large plate.
- Add coriander and a little lime to taste and that’s it! Enjoy this delicious Colombian Bandeja ;-)
