Orange banana nut bread recipe

* 2 cups flour

* 1/2 cup sugar

* 1 teaspoon baking powder

* 1 teaspoon baking soda

* 1 teaspoon pumpkin pie spice

* 1 tablespoon butter, melted

* 1 cup golden raisins

* 1/2 cup crushed walnuts

* 1/3 cup shredded coconut

* 2 medium or 3 small ripe bananas

* 2 eggs

* 6 ounces can unsweetened orange juice concentrate


  • Preheat the oven to 350°F. Coat a 4×8 inch loaf pan with butter to grease it.
  • Sift together the dry ingredients. In a large mixing bowl, whisk the orange juice concentrate, bananas and eggs.
  • Blend in the nuts, coconut and raisins. Add in the flour mixture until well mixed.
  • Pour the mix into the greased loaf pan. Bake 45 minutes at 350°F. Check if the loaf is ready by inserting a toothpick after 35 minutes.
  • If it comes out clean, it’s ready to be taken out of the oven.
  • Immediately top the still hot bread with melted butter.
  • Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature.
