Orange banana bread

Ingredients

Number of serving: 7
Bananas, mashed : 3 No.

All purpose flour : 2 Cups

Baking Soda: 3/4 teaspoons

Butter : 1/4 Cup

Castor Sugar : 1/2 Cup

Light brown sugar : 1/2 Cup

Eggs : 2

Orange rind, grated : 1 tablespoon

Orange Juice : 3 tablespoons

Salt : 1/2 teaspoon

Preparation

  • Sift together flour, baking soda and salt in a bowl. Keep aside.
  • Cream together the butter and the sugar (both white and brown) until well blended.
  • Add in the eggs, one at a time, and continue to whisk.
  • Add in the mashed bananas, orange rind and juice. Blend well.
  • Add in the flour mixture. Mix until just moist. Spoon the batter into a greased loaf pan.
  • Bake at 180 degrees celsius (350 Fahrenheit) for 50 minutes or until done.
  • Cool on a wire rack.
