Ingredients

Number of serving: 2
2/3 cup plus 2 tablespoons confectioners sugar

1-1/4 cup AP flour

1/2 teaspoon salt

1/4 teaspoon baking powder

1 stick or 1/2 cup or 1/4lb unsalted butter, softened

1/2 teaspoon vanilla extract

1 large egg seperated

Preparation

  • Preheat your oven to 325F.
  • Pulse toasted pecans with 2 tablespoons of powdered sugar in a food processor until finely ground.
  • Whisk together the flour, salt, and baking powder in a bowl.
  • Beat together butter, remaining 2/3 cup powdered sugar and vanilla in a bowl with an electric mixer.
  • Add egg yolk and beat well. Add flour and ground pecan mixture from the food processor and mix everything at low speed until just combined 30 seconds to 1 minute.
  • Half the dough and roll out one half between two sheets of wax paper until it's about 1/4" thick.
  • Use the middle rack of the oven.
