- Preheat your oven to 325F.
- Pulse toasted pecans with 2 tablespoons of powdered sugar in a food processor until finely ground.
- Whisk together the flour, salt, and baking powder in a bowl.
- Beat together butter, remaining 2/3 cup powdered sugar and vanilla in a bowl with an electric mixer.
- Add egg yolk and beat well. Add flour and ground pecan mixture from the food processor and mix everything at low speed until just combined 30 seconds to 1 minute.
- Half the dough and roll out one half between two sheets of wax paper until it's about 1/4" thick.
- Use the middle rack of the oven.
