We're used to using our cocotte dish for boeuf bourguignon or ratatouille, but did you know it can also be used to make bread super-easily? This easy recipe makes bread that's (almost) as delicious as bakery bread, with a crisp crust and soft crumb, perfect for making toasts or bruschetta :-)

  • Super-easy pain cocotte - Preparation step 1Place the dry baker's yeast in the bowl of the mixer. Add a little of the warm water (you'll add the rest later). Mix and leave to rest for 10 minutes.

  • Super-easy pain cocotte - Preparation step 3Knead at speed 2-3 (Kitchenaid food processor) for 6 minutes.
  • Super-easy pain cocotte - Preparation step 4Roll out the dough and leave to rest in the bowl, under a clean tea towel, for 1.5 hour at room temperature.
  • Super-easy pain cocotte - Preparation step 5Deaerate the dough. Form the dough into a ball again and place parchment paper in the bottom of the casserole dish before placing the dough on top. Cover again with a clean kitchen towel and leave to rest for 30 minutes at room temperature.
  • Super-easy pain cocotte - Preparation step 6Remove the tea towel, cut slits in the pastry and close the casserole with the lid.
  • Super-easy pain cocotte - Preparation step 7Place the casserole in the cold oven and bake for 1 hour at 450°F/230°C.

Observations

Which flour to use?

We've used cake (wheat) flour, but you can vary the recipes by changing/mixing the flours.

What seeds should I add?

You can add poppy seeds, hazelnuts or walnuts.

How do I replace dry baker's yeast with fresh yeast?

You'll need to add twice as much fresh yeast as dry yeast. You won't need to rehydrate it. You can put all the ingredients directly into the mixer and knead the dough.

What to eat it with?

Is the pain cocotte baked in a convection oven?

We baked the pain cocotte with the oven set to fan-assisted heat, but you can also program the oven for static heat.

Can the pain cocotte be baked in a cold or hot oven?

You'll need to place the casserole in a cold oven. Do not preheat the oven.

Is the pain cocotte baked with the lid on?

You'll need to leave the lid on during baking.

What is the capacity of the casserole?

The capacity of our casserole is 3.9 Liters.
