Homemade speculoos
Speculoos are perfect for accompanying your coffee or tea, but homemade speculoos are even better! These easy, crunchy cookies have a sweet cinnamon aroma that is irresistible, right? Mix the softened butter with the sugar. Once well combined, add the flour, baking powder, and ground cinnamon. Mix until you form a sort of "sand". Finally, add the egg yolks and mix well.
Form a ball with the dough and wrap it in plastic wrap. Refrigerate for 1 hour.
Roll the dough out to just under 1 cm thick, and use a cookie cutter to cut out your biscuits. Place them on a baking tray lined with parchment paper.
Bake for 15 minutes at 350°F (180°C).
And there you have it, your speculoos are ready!
Observations
Spices: here we only used cinnamon, but you can also add nutmeg, ginger, or even cloves (with a light hand).

You can do a shortbread pastry with cinnamon to avoid the eggs, so just take the egg out and add some butter in the mix.
