*Ice cream Cookie Sandwiches

These delights are something I feel are uniquely summertime specialties. Ice cream cookie sandwiches! I don't often make these in the winter. Although it would be much less messy theres something gratifying about a sweet and sticky ice cream sandwich on a hot summers day. For this recipe I use butterfinger candy pieces and a cookie dough made with vegetable shortening instead of butter. Using these ingredients I believe make for the most delicate ice cream cookie sandwiches, it allows it to be soft enough to eat yet still perfectly sweet.  I've always found that hard pieces of candy or chocolate once frozen are simply a liability. I absolutely hate large dense and hard ice cream sandwiches. Using vegetable shortening instead of butter just aids in the softer better eating experience. 


The cookies alone are wonderful and a delicious treat, scoop gobs of French vanilla ice cream in between and its a real winner! I can't imagine I wont be making these over and over again. The hardest part about this recipe is keeping the kids from snatching them up before they make it into the freezer! Enjoy! 



Butterfinger Cookies:
1 cup plus 2 tablespoons all purpose unbleached flour
1/2 teaspoon baking soda
1/2 teaspoon salt

1/2 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 egg

1 1/2 cups Butter Finger Candy  pieces chopped ( I used 1 bag of bite sized holiday candies)

Preheat oven to 375 degrees. Line 2 cookie sheets with parchment or a silicone baking mat.

In a large bowl combine sugar, brown sugar, vanilla and egg. Mix until creamy and light in color. Add dry ingredients and combine until the dough is smooth. Add butterfinger candy pieces. Place 1 cookie scoop full (or 1 generous tablespoon) Place cookies on the cookie sheet approximately 2 inches apart. Using your fingers or a cup flatten the cookies down slightly. You want to press them down so that when they bake they flatten out even further, this allows for a thinner better shaped cookie sandwich.

Bake 9-11 minutes.

Ice Cream sandwiches:
-French vanilla ice cream or other ice cream of choice such as peanut butter swirl or chocolate
-Prepared and cooled cookies

Place one generous scoop of slightly softened ice cream between two cookies and slightly smoosh together. Freeze individually or in a single layer.
