?okoladni keksi s roga?em / Chocolate Carob Sandwich Cookies

Ajme, koliko nas je! ide dalje. Ovog je mjeseca tema roga?, a na?a doma?ica je Maja sa bloga La Dalmatia Gourmande.

Roga? jako volim i njegovom mirisu i okusu stvarno te?ko odoljevam. Intenzivnog je i specifi?nog okusa, a njegov miris, ba? kao i miris cimeta, povezujem sa toplinom doma. Bila sam stvarno odu?evljena kad sam vidjela da je ba? roga? na?a ovomjese?na tema jer sam gotovo i zaboravila na njega, a tako ga volim.

Nakon dugog razmi?ljanja roga? sam odlu?ila upotrijebiti u keksi?ima. Do sad sam ga uglavnom koristila kao punjenje za razne vrste tijesta i savija?a ali nekako mi se ideja sa keksima jako svidjela. Nisam bila sigurna kako ?e grubo mljeveni roga? utjecati na teksturu keksi?a, ali odlu?ila sam ipak riskirati. Vjerujem da svatko od vas ima svoj neki omiljeni recept za kekse, pa tako imam i ja. To je recept koji sam sama usavr?ila nakon nekoliko poku?aja, dok nisam dobila savr?eno prhke ?okoladne keksi?e. Dio bra?na zamijenila sam mljevenim roga?em, malo smanjila koli?inu ?e?era te dodala jo? i ?licu kiselog vrhnja kako tijesto ne bi bilo presuho.


Jedan dio pripremljenih keksi?a punila sam svojim doma?im nougat namazom, a drugi pekmezom od jabuke i cimeta. Oba punjenja su se odli?no uklopila u ovu pri?u i bila sam jako zadovoljna. Keksi?e sam na kraju odnijela u Koprivnicu na veliko okupljanje ?lanova Coolinarike gdje sam imala prilike upoznati i nekoliko kolegica bloggerica koje su me odu?evile i osvojile svojom pristupa?no??u, vedrinom i dobrotom. Maja (Cooks and Bakes), Marija (Palachinka), Jasenka (Sweet Corner), Minja (Minjina kuhinjica) i Maja (La Dalmatia Gourmande) divne ste! Drago mi je ?to sam vas upoznala i imala priliku dru?iti se s vama. :)

Da vi?e ne duljim, evo i recepta...


?okoladni keksi s roga?em
Dovoljno za 65-70 keksi?a

400 g bra?na (pola o?trog, pola glatkog)
100 g mljevenog roga?a
1/2 pra?ka za pecivo
prstohvat soli
250 g maslaca
75 g ?e?era u prahu
1 Bourbon vanilin ?e?er
5 ?lica gorkog kakaa
75 g naribane tamne ?okolade
2 jaja
?lica kiselog vrhnja

Za punjenje:

Nutella/Eurokrem/?okolino namaz/doma?i nougat namaz...
pekmez ili marmelada po ?elji (jabuka i cimet, marelica, naran?a...)


Pomije?ajte bra?no, roga?, sol i pra?ak za pecivo. Dodajte hladan maslac i prstima ga umrvite u bra?no. Zatim dodajte ?e?er, vanilin ?e?er, kakao, naribanu ?okoladu, jaja i vrhnje te zamijesite prhko tijesto. Zamotajte ga u prozirnu foliju i stavite u hladnjak na najmanje pola sata.

Tijesto razvaljajte na debljinu od 2-3 mm pa kalupi?ima ?eljenog oblika izrezujte keksi?e. Sla?ite ih pleh oblo?en papirom za pe?enje, pri ?emu ne trebate ostavljati puno mjesta izme?u njih jer ne?e narasti. Pecite ih na 180 stupnjeva 10 minuta, a zatim ohladite na re?etki.

Pe?ene keksi?e spajajte namazom ili pekmezom po ?elji i pohranite ih u limenu kutiju kako bi zadr?ali svje?inu.


Chocolate Carob Sandwich Cookies
Makes about 65-70 Cookies.

400g flour
100g carob powder
6g baking powder (app. 1 tsp.)
pinch of salt
250g of butter,chilled and diced
75g icing sugar
1 bag of vanilla flavored sugar (10g)
5 tbsp. cocoa powder
75 g dark chocolate, grated
2 eggs, lightly beaten
1 tbsp. sour cream

For the filling:
Homemade nougat spread / Nutella
or
your favorite marmalade (apricot, orange, apple...)


Mix the flour, carob powder, salt and baking powder in a bowl. Add the butter and crumb it into the flour with your fingertips until you get a mixture resembling coarse crumbs. You can also do this using your food processor. Add the remaining ingredients and knead with your hands quickly until it starts coming together into a dough. Wrap it with a plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 180°C. Line two large baking trays with parchment paper.

Place the chilled dough onto a lightly floured working surface. Roll the dough out to 2-3mm thickness and cut it with a cookie cutter of your choice. Place the cookies onto the prepared baking tray and bake for 10 minutes. Allow them to cool down completely.

Spread a teaspoonful of the preferred filling on the flat side of a cookie; place another cookie on top, and gently press. Repeat until all cookies are filled.

The cookies can be stored in an airtight container up to one week.
