Amy's Chocolate Chip Cookies Save the Day!

It's 7:30 Monday night and it occurs to me that Boo is to take his snack of choice for his preschool class in the morning. (Insert word of choice here.) When I ask Boo what he wants to take for snack, he just stares at me, looks in the basket full of single serve, random snacks and says fruit snacks.
The lazy mom in me wanted to scream Ya-HOO! But, then I realized that wasn't fair to him. So, I did a quick scan of what I had in the pantry, and then decided I could redeem myself with chocolate chip cookies. Not just any chocolate chip cookies, but my friend Amy's chocolate chip cookies. Let's be honest, no other cookie really measures up. Period.

Amy's Chocolate Chip Cookies
6 Eggs
3/4 cup white sugar
2 1/4 cup brown sugar
1 1/2 cup melted margarine butter (the real stuff)
1 1/2 cup melted vegetable shortening butter flavored Crisco (recommend getting the sticks)
3-3.4 oz. boxes of instant vanilla pudding
3 tsp. baking soda (level tsp.)
1 tsp. salt (level tsp.)
1 tsp. vanilla
7 3/4 cup flour
2 bag semi-sweet chocolate chips


1. Beat eggs in mixing bowl.  Add sugar, margarine and shortening.  When mixed well, add 3 boxes of instant pudding.  Add vanilla flavoring.

2. In a separate bowl, mix all dry ingredients.  Gradually add dry mixture to the egg mixture.

3.  Add chocolate chips.

4. Bake for 10-12 minutes in 350 degree oven.  When cookies are removed from oven they should just barely be finished baking, since the pudding will continue to set as the cookies cool.


This recipe makes an enormous amount of cookies. It easily can be split into a thirds. One third of a batch gives you about two dozen cookies.
The secret is the pudding mix. And yes, the crisco is melted.
Princess thought she wanted to help. Really she wanted to eat chocolate chips. Yes, she has a church dress on.
I recommend using newspapers instead of racks. Remember how much fat we put in these bad boys.

Boo was a very happy preschooler. He said all the kids loved them. The teachers both want the recipe. Score one for this slacker mom! Thanks to my "Goode Friend" Cris, I have recipe cards for easy print now too!
