Good morning! I hope your Monday is off to a great start.
Yesterday Dutch and I decided to take full advantage of the 60 degree weather and get outside to hike. We headed to Raven Run and completed a 4.5 mile hike as well as a 1 mile run which ended up being an extremely good workout.
The scenery at Raven Run is absolutely breathtaking
so quiet and peaceful.
To fuel our amazing hike I prepared the most delicious, energizing pancakes for breakfast.
Lemon Blueberry Pancakes
Ingredients:
1/2 C whole wheat pastry flour
1/2 C buckwheat flour
1 tsp baking powder
1/4 tsp salt
1 packet NuNaturals Stevia
2 T flax meal
6 T warm water
1/2 c blueberries
1 T coconut oil plus more for greasing pan
1 C almond milk
zest of 1 lemon
juice 1/2 lemon
Directions: Combine water and flax meal in a small bowl, whisk to combine and set aside. In a medium bowl add dry ingredients and whisk together. Add wet ingredients to a large bowl and stir until incorporated, add in flax “egg”. Fold dry into wet and stir in blueberries. Drop by spoonfuls into a preheated skillet over medium heat coated with coconut oil. Cook 2-3 minutes on each side until light and fluffy. Stack pancakes, top with blueberries, drizzle with real maple syrup, and savor every bite!
Combine dry ingredients in a small bowl
and whisk to combine
measure out wet ingredients
whisk together and fold in the dry ingredients.
Carry everything inside and try not to drop your favorite dish onto the floor… I think this is the first time I have ever cried over a bowl
Luckily Dutch came downstairs to see who died, picked up the blueberries, rinsed them off and folded them into the batter haha.
I proceeded to order 2 more of my bowls on line and a few more things, including the dessert dish I bought yesterday and broke already… I’ve been having bad luck lately
I dropped the pancakes by ice cream scoop fulls into a preheated pan coated with coconut oil over medium heat. I cooked them for 2-3 minutes on each side until light and fluffy.
Top off with coconut oil or butter, blueberries, and real maple syrup
and enjoy every last bite of these delicious pancakes. Light, fluffy, and bursting with lemon flavor these cakes are the perfect way to start your day. They were so good I almost felt better about my poor broken bowl. Oh well ill have 2 new ones in 3-5 days
wooo. Alright time to get productive, its been raining here all day and after getting back from the gym all I want to do is lay in bed and listen to it rain, I need motivation. I am also thinking about what to fix for dinner tonight, we bought some bok choy at Jungle Jim’s but I have never prepared it before, any tips/recipes?
