Blueberry Orange Bread
It’s like a bakery around here lately. This time I made a bread almost exactly like the raisin bread, but I switched it up with some frozen blueberries and orange extract. 1/2 teaspoon really good orange extract Put the wet ingredients in the bread maker, followed by the dry ingredients, except for the blue berries. Set on white bread, light crust. Add the blueberries when you get to the add fruit and nuts notification (mine beeps). Do not make that one. It didn’t cook through and it was edible only after we sliced it and toasted each piece till it was cooked. Way more work than I wanted to deal with – So, I tried it again. 1 teaspoon really good orange extract Add wet, then dry, except for blueberries. White bread setting, medium crust. Add the blue berries at the proper time according to manufacturer’s instructions. This did not come out as I expected. It didn’t rise all the way, and it was denser than bread. It was more like breakfast bread, or a carrot cake. It was however, really, really good. Really good.
