1/2 cup Caramel Nut Granola Snacks (ground in a food processor is best)
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup l buttermilk
1/2 teaspoon hot sauce (such as Tabasco)
3 tablespoons all purpose flour
4 (6 ounce) tilapia fillets
1 tablespoon oil, divided
lemon wedge
1. Combine the ground Granola, salt, garlic and pepper in a shallow dish.
2. Combine the buttermilk and hot sauce (such as Tabasco) in a medium bowl.
3. Place the flour in a third dish.
4. Dredge 1 fillet in flour, dip into buttermilk mixture, then into granola mixture. Repeat with remaining fillets.
5. Heat 1 1/2 teaspoons of oil in a large skillet over medium-high heat. Cook 2 of the tilapia fillets for 3 minutes on each side or until fish flakes easily.
6. Add remaining oil and cook additional 2 fillets.
7. Garnish with a lemon wedges.
Note: Similar to a pecan crusted tilapia, this great recipe has the added taste of the caramel from the Caramel Nut Granola to make this a perfect dish for a special occasion or a week night family meal.We also like to squeeze some lemon juice on the top and the sprinkle with a little sea salt when it is being served.
