Chicken and Bacon Melt - Nice Pub Grub
Chicken fillets topped with crispy bacon and melty cheese, add chips and a side salad and you have one tasty meal! And before you ask - yes I did eat it all up thank you very much it was very nice too. I don't expect it would have done me a bit of good (bikini wise) but hey ho it was nice! So easy to make to! To serve 2 you will need: 4 rashers of smoked back bacon a little vegetable or sunflower oil for frying 2 chicken breast fillets - skinless two handfuls of grated extra mature cheddar cheese some plain flour 1 egg - lightly beaten 1 tablespoon of water salt and pepper Also: a large frying pan,cling film, a small roasting tin and something flat to bash the chicken flat with! Put some flour on a plate and mix in a little salt and pepper. Put the lightly beaten egg in a small bowl along with two teaspoons of water and mix. Put your chicken fillets (one at a time) between a large piece of cling film. Bash with something flat and bashable (not too hard or you will tear the fillet). You just want to make them even thickness so they cook quicker and evenly - you don't want them too thin. Heat your frying pan and add the bacon - no need to add any oil at this stage. Cook the bacon to however you fancy - I like mine nice and crisp. Remove the bacon and set aside. No need to wash the pan. Dip each fillet first in the flour, then the egg and then into the flour again. Put your grill on to heat up. Add a little oil to the frying pan and heat it up. Fry the chicken fillets in the hot oil for about 3 minutes each side. Check they are cooked through. When they are transfer them to a small roasting/baking tin. Top each fillet with two of the cooked rashers of bacon and a good handful of cheese, pop under the grill till the cheese melts. Job done - just serve with chips and salad. related searches : Chicken
