Chocolate Cake Ice Cream Cones
This weekend was fun! Family functions, birthday party, Grey Cup Food fest an even some snow shoveling. Oh wait, the snow shoveling was not that fun but don’t tell Zesty Junior I said that. One of the highlights was little miss Zesty turning 3 years old. It was super fun and I wanted to be a cool Dad so I tried to make Chocolate Cake Ice Cream cones. Zesty junior and I tackled this project on Saturday morning and had way too much fun doing it. The whole premise was too take normal ordinary ice cream cones and bake a cake inside them and top them with icing. This would resemble an ice cream cone. Pretty simple right? Actually it was not too bad. I am going to provide you with the step by step instructions and then write a recap on my thoughts and how to possible improve these fellas in the future. Now, I didn’t invent these by any stretch of the imagination but I have a couple of ideas for future mock ice cream cones. Ingredients 1 package dry cake mix (any flavor – I went with Chocolate) 12 ice cream cones 1 1/3 Cup Water 1/2 Cup Oil 3 Eggs Method Preheat oven to 350F. Mix cake mix per directions on box. If using a white cake mix, divide mix into four separate mixing bowls and use food coloring to make different ice cream “flavors”. Place ice cream cones in muffin pan and fill about 1/2 to 3/4 full. Bake 15 to 20 minutes or until done. With remaining batter, fill small muffin tins about 3/4 full and bake until done for the top of the cupcake. Cool on a wire rack. Let cool completely before assembly and frosting. ENJOY! Zesty Tip: The only tip I have for you is that the cones became a little soggy. I am not sure if this was the fact that the batter while cooking seeped through and caused them to get soft or that I had bought some stale cones. My suggestion in the future would be to bake the big cupcake and the mini cup cake separate and then fill the bottom of the cone with some candy and just assemble the cone the way I did without baking the cone.
