Chocolate Coconut Macaroons

Tomorrow's Friday! Tomorrow's Friday! Tomorrow's Friday! Yeah, I am a bit excited. That means my headache will go away for a couple of days, until Monday. In addition, a friend asked me to sub and teach a class at the university on Saturday. I haven't taught college in several years,, since I bought my house. My first experience was wonderful. So, I am excited. Totally fun!

The weekend is also when these macs will be baked again. But, not by me. Allow me to explain. I baked a bunch of items this weekend, packaged them up and brought them to work. The minty cupcakes went to the front office staff and the cookie platter went to the custodians. Because I am one of the first to arrive to school in the morning, I usually just drop off the goodies off with a note of what they are, and go about my day.

On Monday, like any typical day, I was out and about in the building, in my zone just to make it until the end of the day. As I walked through the media center, I heard from the distance, "The chocolate cookies were awesome." Huh? I was confused because I was caught off guard. It turned out that the custodians shared with the media center girls and they tried the macaroons. They loved them!

One of the ladies told me she was going to make these macaroons this weekend. Cool! It's so flattering when someone enjoys a dish/dessert enough to try it on their own. Another possible foodie in the works!

Chocolate Coconut Macaroons

¾ cup semi-sweet chocolate chips
14-ounce can sweetened condensed milk
3 cups shredded coconut
1 cup finely chopped walnuts
1 teaspoon vanilla extract
¼ tsp. of salt

Preheat oven to 350ºF. In a heavy saucepan over low heat, melt the chocolate and the condensed milk. Stir continuously until the chocolate is melted and mixed into the milk. Stir in the coconut, walnuts, and vanilla, until fully coated and combined. Drop by rounded dollops onto a lined/greased baking sheet. Bake for 10 minutes. Remove and cool on a wire rack.
