Simple coconut cake recipe
Preparation

Preheat the oven to 190°C/375°F.

Beat the butter with the sugar, than add eggs one at a time.

Add coconut flakes, flour, sour cream and lemon zest.

Mix well until all ingredients are incorporated.

Spoon the batter into a prepared tube pan (greased and dusted with flour).

Bake the coconut cake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Let the coconut cake rest 10 minutes in the pan, than onto a rack.

Before serving dust the cake with icing sugar.

You can also serve the coconut cake with a lemon syrup as in this simple cake recipe.
