100 g/7 tablespoons softened butter

140 g/1/2 cup confectioners sugar

2 eggs, lightly beaten

140 g / 1 2/3 unsweetened shredded coconut

100 grams / almost 1 cup self rising flour

70 ml / 1/3 cup sour cream

1 1/2 teaspoon lemon zest


  • Preheat the oven to 190°C/375°F.
  • Beat the butter with the sugar, than add eggs one at a time.
  • Add coconut flakes, flour, sour cream and lemon zest.
  • Mix well until all ingredients are incorporated.
  • Spoon the batter into a prepared tube pan (greased and dusted with flour).
  • Bake the coconut cake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  • Let the coconut cake rest 10 minutes in the pan, than onto a rack.
  • Before serving dust the cake with icing sugar.
  • You can also serve the coconut cake with a lemon syrup as in this simple cake recipe.
