Coconut Chicken
I like Thursdays. Mondays and Wednesdays are school days, and Tuesdays tend to be hurry-up-and-read-for-school days. On Thursdays, I can relax a bit. I decided to sleep again this morning instead of waking up to run. I accidentally slept a little longer than planned, so I was a bit rushed this morning.
Arnold Honey Wheat breadRicotta CheeseBonne Maman Four Fruit PreservesAlmonds (toasted in the microwave)1/2 banana I enjoyed this breakfast. It wasn't as filling as oatmeal, but it was still tasty. I had a lunch meeting today at Tuckers, and didn't feel comfortable snapping a picture. I'm sure you understand. I had a tossed salad and a bowl of minestrone soup. It wasn't anything special. After sweating all afternoon again since the A/C is still messed up (the part didn't come in today!), I came home and ran 5 miles. Let me just say that running in the afternoon is 10x harder than running in the morning. I'm used to semi-cool, dawn, quiet, waving at the same 4 cars at the same exact time type of runs. However, running in the afternoon is hot, bright, loud, and dangerous from all the cars in my neighborhood. It was still a great run! I was absolutely parched after my run. Thoughts of cantaloupe and pineapple pushed me through my run. La Croix & fruit...better than Coke & candy, right? For dinner I made coconut chicken strips by dipping chicken cutlets in egg whites than dredging them in a combination of flour, unsweetened shredded coconut, onion powder, garlic powder, paprika and sea salt.
