Company for Dinner...Fried Chicken!

First of all, get that beverage going! We're an iced tea family so it was the first thing to get made...

Next...Get a salad made. Fried chicken with salad and iced tea go great together. With the tomato scare still going on here, I opted for just greens, carrot, cheese, bell pepper and cucumber.

Next...Pull out some buttermilk...You'll be soaking the chicken pieces in it!

Now, pour it over the chicken...Don't be stingy!! Liberally! You want to let it soak in the buttermilk for at least an hour.

Next...Grab some cooking oil (I always use peanut oil because of the high heating point) and all purpose flour.
At This point, pour the oil into your skillet (cast iron or aluminum) and turn on the stove to heat the oil...When a pinch of flour thrown into the grease sizzles, the grease is hot enough.


Flour up the pieces! Just keep turning them over and over in the flour until they are Well covered.

Fry the pieces til they are a very light brown on both sides, probably 2-3 minutes on each side.

Now turn the heat on low and cover.

Next...While the chicken is frying, get your drip pan ready. You can use a plate with paper towels or in this instance, I use a large cookie pan, cover the bottom with parchment paper and slide a metal cookie tray on top of it. That way, the grease drains away from the chicken...I Hate greasy chicken!!

Now...Check the chicken! Brown enough for you? Please remember that legs and thighs take the longest to cook...Before frying Those pieces, I cut slits beside the bones with a knife so the grease can do a better job of cooking.


What else are you going to serve with your meal?? I chose corn...With a Big dollop of butter on top...LOL...

Poor little empty plate!!! Every one arrives just on time!! I hear Henry and Ryan now!!

Well, the chicken's done!

And here's Ryan and Hubby...sated...and dreaming about cruising the country in a motor home...dream on big guy!!LOL......

So, there you have it...Buttermilk Fried Chicken. We love it done this way in our little corner of the world...Very crispy! So, next time you feel like a little chicken, try it this way...Yes, it takes a while to do...but it's So worth it!!
