Ingredients

Number of serving: 4
3 1/2 pounds chicken breasts, or chicken pieces

1/3 cup extra virgin olive oil

1 t fresh lemon juice

1/4 cup white wine

2 T grated Romano cheese

2 T fresh Parmesan cheese

1/4 t dried oregano

1/4 t dried basil

1/2 small bay leaf, crushed

1 large clove garlic, minced

1/2 t salt

pepper

Preparation

  • Place chicken pieces skin side up in a baking dish just large enough to fit all the pieces.
  • Combine the other ingredients and spoon over the chicken.
  • Bake at 350 degrees for 1 1/4 hours for bone in, 40 minutes or so for boneless breasts. Baste often.
  • Serve with rice and spoon the dripping on the rice.
