Curried Asparagus Hummus
Adding roasted vegetables to traditional hummus, ups the nutrient value and uses veggies that may need a home before heading to the compost pile. Just found this book on Amazon. Looks like fun, doesn't it?
Difficulty Level: Easy What you need: 15 asparagus spears, trimmed and rubbed in olive oil 5 cloves garlic 1 tsp. cumin seeds 1 tsp. curry powder 1/4 tsp. turmeric 1/4 tsp. chili powder 1/2 tsp. sea salt 1/8 cup lemon juice 1 tbsp. tahini 1 cup cooked chickpeas 1/8 cup water, or as needed What to do: Preheat oven to 350 degrees F. Roast asparagus spears for 15 minutes. Meanwhile, place garlic, spices, and salt in a food processor and pulse until you have a spicy paste. Add the remaining ingredients, (including asparagus) and pulse until smooth, adding enough water for your desired consistency. Yields: 1 1/2 cups related searches : Curried
