Date and Walnut Loaf
I had a few dates and walnuts knocking around so whipped up this Date and Walnut loaf from Mary Berry's complete cook book. It is lovely served with a bit of butter spread on and a mug of tea, so quick and easy to do and tasty. Date and Walnut Loaf - Cuts into 12 slices 90g/3oz soft butter or marg (plus extra for greasing) 250g/8oz Dates - stoned and roughly chopped 150ml/1/4 pint boiling water 90g/3oz caster sugar 1 egg 1tsp baking powder 90g/3oz chopped walnuts 1kg/2lb loaf tin Lightly grease the loaf tin and line with greaseproof paper Put the dates into a bowl, pour over the measured boiling water and leave for about 15 mins. Combine the butter, sugar, egg, flour and baking powder in a large bowl and beat well until blended. Add the dates, walnuts and the soaking liquid. Stir to mix. Spoon into a prepared loaf tin and bake in a preheated oven ar 18 degrees f, gas 4 for 1 1/4- 1 1/2 hours until well risen and firm to the touch - a fine skewer should come out clean. Leave to cool in tin for few mins, then turn onto a wire rack - leave to cool completely. Serve sliced with butter - Enjoy x related searches : Date
