Deep fried Aspargus Bacon Wrap, with garlic thyme sauce

This is a real hit and will be gone with a blink of an eye!  There is a Chinese restaurant we patronize that serves this with salad cream as part of their Dim Sum menu.  I feel it is not so complimetary to Dim Sum. I think this makes a stunning anti pasto for a main western meal.  At first, I wanted to serve this with salad cream too but while I was preparing the dish, my god son, Darryl who is an aspiring chef suggested that I served with garlic thyme sauce instead.  So conveniently, I told him to make the sauce and he did.  OMG!!!  It was SOOOO delicious with the sauce that I ate 3 of them even before I serve the meal.. LOL!  You guys MUST try this!  AWESOME!! Thanks Darryl for the great suggestion and preparing the sauce.




  




Ingredients:


4 pieces of bacon, cut into 3 pieces
1 medium carrot, cut out 12 sticks
24 stalks of asparagus
2 cups vegetable oil


Ingredients for the sauce:


6 bibs of garlic, chopped
1 tsp of chopped fresh thyme
300 ml whipping cream
¼ ts freshly ground black pepper
1 ts white wine
1 ½ tbs olive oil
a dash of salt


Method to prepare the wrap:


Wrap the asparagus and carrot stick with bacon and hold them in place wth a tooth pick. Heat the oil in deep pan and when the oil is bubbling, put in the wraps and deep fried till bacon is cooked.  Remove them and place them on paper kitchen towels to have all the oil absorbed. Don't forget to remove the toothpicks. Please do it gently not to break the bacon.


Method to prepare the sauce:
Sautee the garlic in olive oil till fragrant.  Add Whipping cream, thyme and white wine.  Let it simmer for 2 mins and remove from heat into a sauce boat or a sauce bowl.



Note: There are various ways to serve this anti pasto and I have a few pictures to show the different presentations.  You can select one presentation or create your own. Let your creative juice flow!
