My New Favourite Vanilla Cake
Thanks to Nigella Christmas Book I have found my new favourite vanilla cake.
Actually, I have to thank a cake decorating buddy on the other side of the country for finding it for me in the first place. I needed a good cake that I could make many of and this one fits the bill. Whilst the recipe states to make it in a Bundt tin I make it in two 8" round cake tins and that therefore makes it a good economical cake in the end. The other thing I love is that it is made with a food processor so really not a lot of work, maybe, just maybe some extra washing up but that's it. I recently made 12 of these cakes for a charity event, froze them then iced them with vanilla bean frosting. So for me, it ticks all my boxes, quick to make, economical, freezes well and tastes great iced or uniced. Oh I did make one change I used self raising flour instead of plain and bi carb of soda - just easier really. Spruced Up Vanilla Cake - Nigella Christmas 225gms softened butter 300g caster sugar 6 eggs 350g self raising flour 250ml or 250gms of plain fat thick style greek yogurt (I get my from the deli it is very creamy) 4 teaspoons vanilla extract Method Put all the ingrdients into a food processor and blitz together for around 90 seconds. Just take a look you will see when it is all combined. Pour evenly into 2 x 8" greased round cake tins (I used Bakers Joy on mine - lazy but look at the result!) Place in a preheated 160C fan forced oven (you need the fan forced with 2 cakes for 45 minutes or until a skewer comes out clean). If you are going to cook them one at a time and non fan foced then bake at 180C. Turn out and let cool till just warm - if can wait that long and then dust with icing sugar.
