Ingredients:
1 Fresh Pineapple
100 grams Shrimp
100 grams Squid
100 grams Fish Fillet
50 grams Catsup
50 grams mayonnaise
1 jigger white wine
30 grams lemon or Dayap
30 grams Celery leaves
1 teaspoon Salt
1/2 teaspoon White Pepper
Carrots
2 pieces Bamboo stick
1 Cocktail Umbrella
100 g Ripe Mango
1 liter Water
1 teaspoon Tabasco

Preparation:
1. Slice the pineapple into half.
2. Carve to shape like a wheel then cut the center of the round slice pineapple wheel then insert with carrot tube.
3. With the remaining half portion of pineapple take out the inside shape like a trolley cart.
4. Assemble the two wheels both side of the pineapple then set aside.
5. Have ready boiling water to which you add the celery, lemon, white wine, season to taste.
6. Blanch all seafood for 5 minutes then set aside.
7. Keep cool for sometime.
8. Combine the Catsup, Mayonnaise, Tabasco, salt & pepper into mixing bowl.
9. Mix all seafood and chunk Ripe Mango, drizzle with the cocktail sauce.
10. Place over the top of carved pineapple then serve immediately.
