Easy + Quick + Healthy Soft Tacos
There are days when it feels like it would be easier to go out and grab something to eat. I felt like that on Tuesday night because my husband worked late, the baby wouldn’t go down for a nap, and my boys were tired and hungry. How nice it would be to go to Sharky’s to buy a couple of burritos. Then I started thinking about getting the kids ready, putting shoes on, loading them in and out of car seats, spending $6 for a burrito when I can make one at home for a fraction of that, possibly dealing with a crying baby (she doesn’t like to be confined to a car seat), and the thought of going out was no longer appealing. So I put the baby in her Little Einsteins exersaucer and told the boys that they were going to help make soft tacos on blue corn tortillas. We set out healthy toppings: olives, tomatoes, lettuce, cheese, black beans, and avocados. We used organic black beans from Trader Joe’s. My little helpers putting together their soft tacos on blue corn tortillas. Soft tacos are great with sautéed bell peppers but we didn’t do that tonight. Everything seems so perfect and calm in the pictures of my boys making tacos but pictures don’t always tell the whole story. This is why I love easy + quick + healthy meals.
