Strawberry Ice-Cream

uscious plump strawberries so aptly represent the spring and summer in my opinion. Nature at its prime, vibrant and full while the strawberries are gorgeously plump, red, sweet and juicy, a delightful treat for the eyes and taste buds alike. The bright sunshine, the blooms and the flowers make you feel good and admire nature and so is the sight of the red strawberries which are to be seen everywhere. My shopping baskets get filled with the bright reds every time I visit the stores ? they are irresistible (and also very cheap lol:)) And so as you have guessed I have been making a lot of things with these beauties lately and this is the first in the series - a stunning pink and delightfully yummy strawberry ice-cream.
Wait there's more. This is a four ingredient and 3 step ice-cream recipe without the need for an ice-cream machine- yup you heard me right this thing is ridiculously easy in fact it was my cooking project with my little princess this weekend. She is all into anything pink these days - pink hearts, pink dress, pink toys, pink bangles, clips- she demanded for something pink to eat (which she rarely does) the other day and so we made this pinky- pink ice cream for us :)
Ingredients:Strawberry .................................... 1 1/2 cup (pureed)
Powdered sugar .............................. 3/4 - 1 cup or to taste
Whipped topping ............................ 1 8 oz pack
Strawberry pieces ........................... 1/2 cup
Vanilla Extract ............................... 1/4 tsp
Method:1. In a large glass bowl add the puree, vanilla and powdered sugar and mix well to combine.There should be no lumps, a whisk works best.
2. Add the whipped topping and fold in well but very gently.
3. Pour in an air tight plastic or glass container with a tight fitting lid. Cover and put in the freezer for 1 hour.
4. After 1 hour , mix in the strawberry pieces and return dish to the freezer.
5. Allow it to freeze for another 5-6 hours till set.
6. Take out and dig in. ENJOY!
Notes: 1. If you don't have access to whipped topping you can use heavy cream. Whip about 3/4 cup of cold heavy cream and 1/2 tbsp powdered sugar in a bowl till light and fluffy. Refrigerate for an hour before using.
2. For making strawberry puree just blend about 2-3 cups of washed and chopped strawberries in a blender, strain and use.
