Egg Nog Butter-Mochi
Warning! For serious butter mochi lovers only! Presenting… just in time for the holidays… Egg Nog Butter-Mochi! Oh yeah! Did I mention that I LOVE mochi. Not sure why but I suspect it’s because it’s high in calories and carbs. Egg Nog Butter- Mochi 4 cups mochiko (sweet rice flour) Mix together dry ingredients in large mixing bowl. Mix all liquids together in a separate bowl. Add liquid ingredients to dry ingredients. Blend until smooth. Pour into greased 9 x 13, or 2 square cake/brownie pans. Bake at 325 degrees for 5o minutes then check if the middle is firm. Bake for about 5-10 more minutes, or until golden brown. Cool and cut into desired pieces. Sprinkle with powdered sugar. I used store-bought egg nog, but I bet homemade would be amazing! I also baked a few mini-cupcake sized mochi. For this option, fill mini cupcake liners about 3/4 full then bake at 325 degrees for 30-35 minutes.
