Fresh Fruit Salsa with Cinnamon Crisps

We're trying out some fun new dishes for our New Years Eve festivities!  I just finished making this one and it is SO good!  I saw a recipe idea online and changed it for what's in season and my own tastes.  The Cinnamon Crisp recipe can be found in the Better Homes and Gardens Cookbook. 

This salsa is so fresh and bright, it brings a taste of summer to these bleak winter days.  What a great way to ring in a new year, serving something so bright and hopeful!   I hope you enjoy it as much as we are enjoying it!

Fresh Fruit Salsa

3-4 kiwi
2 golden delicious apples
1 C. raspberries or strawberries (I used frozen)
1 pear, Bosc, Bartlett, whichever you prefer or is in season
1 T. lemon juice
1/4 C. strawberry or raspberry jam (I used my homemade freezer jam for a good color)
2 T. brown sugar
1 T. honey
1 T. sugar

In a small bowl, mix jam, sugars, and honey.  Set aside to let the sugar start to dissolve.   Peel, core, and finely dice pear and apples, place in small bowl and sprinkle with lemon juice... stir to be sure the lemon juice coats them well.  Peel and finely dice kiwi.  Mix all fruit together in a medium sized bowl.  Pour the jam & sugar mixture over the fruit and gently mix until all fruit is coated.  Chill 1/2 an hour, stir again (juices from the fruit will have thinned the dressing).  Serve with freshly made Cinnamon Crisps.

Cinnamon Crisps

1 pkg. flour tortillas
butter, softened
cinnamon sugar (mix about 1 C. sugar to 1 T. cinnamon)

Heat oven to 400 degrees.  Spread a thin layer of butter on a tortilla, sprinkle with cinnamon sugar.  Cut into 8 wedges. (a pizza cutter works great for this!)  Place wedges on cookie sheet and bake for 8-10 minutes until the crisps are starting to bubble a little and turn light brown on the edges.  Cool a minute and transfer to a basket or bowl for serving.  (if you need to wait to serve them, after they cool place them in an airtight container.)

Joy's Notes:  You could use any fruit in season, though I think banana's would brown easy and add a slimy texture I'm not ready to try yet. ;o)  Pineapple or some diced orange would blend in well.  I can't wait to try this in the summer with fresh strawberries and raspberries. MMMmmm!
