FRESH STRAWBERRY PIE

It is perfect for the upcoming Memorial Day weekend, Fourth of July or just anytime you are craving a fresh fruit pie. It is flavored with almonds which makes it oh-so-yummy. You can use a ready-made pie crust or if you have the time, you can make your favorite pre-baked pie crust. Either way, you are bound to get rave reviews. 1 ready-made (9") vanilla wafer or graham cracker crust 1 (8 oz.) pkg. cream cheese, softened 3/4 c. confectioners' sugar 1 tsp. vanilla extract 1/2 tsp. almond extract 1 c. heavy whipping cream, whipped 1/4 c. chopped almonds 4 c. fresh strawberries, halved 1/4 c. strawberry jelly In large mixing bowl, combine the cream cheese and confectioners' sugar. Beat with electric mixer on medium speed until smooth. Beat in the vanilla and almond extracts. Fold in the whipped cream and almonds by hand until well mixed. Pour into crust. Refrigerate until firm. Decorate pie with strawberries halves. Heat jelly in microwave just until soft and gently brush over strawberries until glazed. Refrigerate until serving.
