General Tso?s Tofu
While Stephen and I were on our Amazing Savings Road Trip, we discovered a find! Stephen picked up this treasure, deciding that we should make our own General Tso?s chicken for dinner. Remembering a recent Whole Foods trip, I had something different in mind. I wanted to recreate the General Tso?s tofu from the hot bar! In December, I won a giveaway for a free Nasoya product from a giveaway hosted by Lexi. I was excited to finally use my coupon, deciding to purchase the extra firm variety. I drained the water from the container then squeezed excess liquid from the tofu by squeezing it between two paper towels. After that, I cut the tofu into cubes. Easy as pie. Next, preheat the oven to 375. Then comes my favorite part? Greasing the pan! I don?t like to use the spray butter stuff. So I usually grease my pans with coconut oil. It’s kinda messy, but it’s fun! Tropical Traditions sent me some virgin coconut oil to try, and I love it! I?ve been buying coconut oil a lot lately, and of the brands I?ve tried, this is my favorite. Right now, the 32 oz. jar is on sale for $27.50. Not a bad price by coconut oil standards! Especially considering the care that this company takes to provide unrefined, quality coconut oil. You can read more about how Tropical Traditions Gold Label Virgin Coconut oil is made here. After greasing the pan, its time to marinate. I simply poured the General Tso?s sauce into a container. And then I dipped the tofu directly into the sauce. The tofu then goes on to the greased baking sheet. Bake for 15 minutes at 375.
Bake for 15-20 more minutes, and remove from oven. In order to get ?crispier? texture, remove from baking sheet and sauté tofu, canola oil, and more marinade in a skillet at medium heat for no more than a minute-tofu burns easily! Serve General Tso?s tofu with jasmine rice and broccoli. *** Are you excited about watching the Olympics tonight? I know I am!
