GLAZED COCONUT BREAD

Has the baking bug bit you yet?  This house is filled with all the wonderful smells of Christmas!  Tonight I made one of my Daughters favorite treats.  Glazed Coconut Bread is easy to make, and is perfect for your holiday get-to-gethers.  This quick bread is really delicious, and the glaze over the crunchy top is to die for.....well almost. I've actually got two recipes for this bread, and chose to make the recipe with buttermilk.  It seems to stay really soft on the inside, and has the Coconut glazed, crispy decadent top on the outside.  I hope you are all enjoying your holiday baking.  If not, then....."Get Off Your Butt and Bake!"









COCONUT BREAD

Version 2



4 eggs

2 cups sugar

3 cups flour

1 cup oil

1 cup buttermilk

*do not substitute

1/2 tsp. salt

1/2 tsp. soda

1/2 tsp. baking powder

1 cup coconut

2 teaspoons coconut extract

1 teas. vanilla



Mix together the oil and the sugar.  Add the eggs and beat well.  Mix in the buttermilk and flavorings. Add flour, salt, soda and baking powder, and mix until well blended.  Mix in 1 cup of flaked coconut.  Mix.

Grease and prepare 2 small loaf pans.  Bake at 325 degrees for 1 hour and five minutes.  Cover with foil if bread starts to get too dark.  Cool in pans for 10 minutes, while preparing the glaze.



Glaze

1 cup sugar

1/2 cup water

1 tsp. Coconut Extract

2 Tablespoons butter



Mix all together over medium heat, and boil mixture for about 4 to 5 minutes. Spoon all of it over the bread.  Leave in pans to put the glaze on. YUM!
