Green Goddess Dressing
Before I started making my own salad dressing***, one of my favorite store bought dressings was Green Goddess. Cool and refreshing with a sweet tang, it makes even the "yuckiest" vegetables seem like treats. 1 avocado 1 Tbsp raw apple cider vinegar 1 cup buttermilk or kefir 2 Tbsp olive oil the juice from half a lemon 2 Tbsp fresh chopped parsley 1 garlic clove, minced 1 to 1 1/2 tsp of salt a pinch of white pepper 1/2 tsp onion powder 1/2 tsp of dijon mustard 1/16 of a tsp of stevia (or a pinch or a little scooper full if it came with a scooper) Using a hand blender, blend ingredients in a medium bowl. I transferred the dressing to a quart size jar. The recipe makes about the same amount as an average size bottle of dressing. The Family Reviews: The dressing got mixed reviews, but it went on top of a salad which contains vegetables. Anything with vegetables is not going to make my kids do cartwheels. My oldest son ate all his salad. I felt happy to see that he enjoyed it enough that he finished it off. My husband is a Green Goddess fanatic and he really liked it too. My 5 and 4 year old ate some of it, but didn't pitch a fit when I asked them to take a bite. Neither of them made a face or said, "yuck!" I'll take that to mean they thought it was ok. ***My everyday salad dressing is 1 Tbsp raw apple cider vinegar, 1 tsp of healthy oil (coconut oil, olive oil, pumpkin seed oil is my new favorite), 1/4 tsp of salt, some fresh cracked pepper, a pinch of stevia, and a couple of dashes of cayenne pepper.
