Have Your Pasta, And Eat It TOO!

I woke up bright and early this morning ready for a yummy breakfast and some Power YOGA. I have always LOVED the 10am Power class. It always just sets the mood for Saturday. Makes me happy! Perfect start in my book. Although this isn?t too bad of a start either?

Nothing says ?Good Morning? like a big glass of blended spinach and banana?well, at least in my book Wink


 


A couple hours later I was off to yoga. It was a great class, much better than yesterday. For some reason I was dizzy all during class yesterday and spent the majority of it in child’s pose. Weird! I was fine until I started moving in class yesterday. No dizzies today though! We did lots of balance poses and I enjoyed every second. It always feels so great to practice in the morning and really sets the tone for the day. We were all ?blissed out? at the end of class. Love it.


 


I came back ready to make a light and summery lunch. I LOVE pasta salad but always find it to not be very satisfying. You don?t really get much bang for your buck with noodles. Don?t get me wrong, I love pasta (heck, I?m Italian!) but I like to have a little more volume, ya know?  Well, ever since I made raw pasta, I have been dreaming up a cold pasta salad using zucchini noodles.

Looks like real noodles, huh? I spiralized a yellow squash and topped it with some steamed broccoli (and by steamed I mean I zapped it in the micro with some water for 2 minutes?comes out perfect every time!), diced carrot, diced red bell pepper, scallions, and some homemade balsamic dressing (balsamic vinegar, olive oil, dijon mustard, garlic). Toss together and voila!


 


I decided to add a little feta to the mix for a little something extra. It would have been perfect with some basil too but I didn?t feel like going out to the backyard?

It was very easy to prepare and really good! I also had the juiciest mango I have ever eaten with it. Perfect light (and guild free) lunch!
