I just baked up a nice loaf of bread from The Healthy Bread in 5 Minutes a Day Cookbook.



Baking with my new pals of the HBin5 group, out bi-monthly recipes were Avocado Bread and a Pesto Pine Nut Bread.


Somehow deep in my tiny brain, I was picturing both of these breads as turning out green. Could it have been the influence of the upcoming St. Patrick’s Day celebration that was clouding my mind?  Silly me, they are no where near green. And now that I think about that, it’s a good thing.


Peato Pine Nut Bread


My very favorite was the Pesto and Pine Nut Bread pictured above. I cut this bread warm out of the oven so don’t mind the look of the crumb of this loaf. I should have let it cooled for a perfect picture. But I didn’t. I couldn’t! I loved the nut studded loaf with the flavors of basil and Parmesan drifting throughout this soft bread. While I thought this was a great dough to bake into a loaf, I think it would make a wonderful foccassia bread or pizza crust. I can see this bread being made again, and again!


Avacodo Bread


The second loaf of bread was an Avocado and tomato bread. (Pictured above) The avocado and a tomato are diced up and incorporated into the dough with the wet ingredients. A nice dough, a beautiful loaf, but we were not fans of the taste. My daughter had a sandwich made out of this bread and she informed me after school that her sandwich was weird tasting.


 ”New bread”, I told her.

I don’t think I’ll be making that one again.


But all in all, I have to say, it’s been wonderful baking my way through this book. I’m incorporating a healthier bread into my family’s diet while trying easy breads I would have never baked on my own!
