I canned a whole lOTT of tomato juice, now I'm making veggie soup

When the weather turns cooler I start to crave a hot bowl of soup.  One of the soups Ott, E likes the most is my vegetable soup.  And it is soooo easy to make, therefore perfect for a quick fix after I get home from work.  And as an added bonus it is super healthy for you as well.

To start with I take a quart size jar of my canned tomato juice off the pantry shelf open it and pour it into a pan on the stove over medium heat. 

To that I add a bag of frozen mixed vegetables.  And then, if you want you could add some chopped up meat.  Usually I add lamb, but you could easily use chicken, turkey, or whatever you have on hand.  (It's a great way to use up leftovers as well.)  Heat up your soup good and hot and then serve.  Throw in some crackers and it delish!!!!
